Restaurants should be designed with the spotlight on an immersive culinary experience. The lighting setup can have a positive or negative effect and it is critical to ensure the food presentation is rendered to perfection.

Spearhead Interior Contracts was recently commissioned by a long standing client, the Aviator Hotel O.R.Tambo Johannesburg, to develop a new full service restaurant. The design thinking required a fresh, hands-on approach to refurbish, re-brand and expand the Hotel`s existing café diner and ancillary spaces. The design team was challenged to accommodate crowds of banqueting diners, in addition to the Hotel`s high occupancy guest dining configuration.

Spearhead accomplished the expansion by designing a new East wing around the existing core building for additional seated areas, including re-designing the main Hotel kitchen to include a new streamlined pizza and buffet service.

❖ Design strategy and brand story

The design team approached the strategic design by developing a strong brand story. The narrative “the Tin Goose” needed to be pivotal to “the Aviator Hotel`s” current identity, but offer guests an unforgettable multi-sensory dining experience. A festive and spontaneous discovery took flight as the team developed the design concept around “Great Gatsby” inspired design detail, Art Deco aviation elements and a brand new sound stage for “unplugged acoustic performances” and Contemporary Jazz music. 

❖ Lighting design and the culinary experience

“the Importance of efficient Lighting and impact on the cullinary experience was one of the key considerations in the successful delivery of the project”.

At the forefront of the lighting design strategy, Spearhead implemented energy efficient lighting technologies to reduce the carbon footprint and considerably trim down the Hotel client`s operating costs. New generation LED architectural lighting are the perfect light source for dynamic colour rendition, long service life, increased productivity and maximized efficiency.

❖ Colour rendering of baked goods, meat, fruit and vegetables

The buffet service line required custom lighting zones for the grilling, salad bar, fresh baked sections and food prep areas. The high colour rendering LED luminaires is available in particularly soft golden-yellow tones for the attractive illumination of fresh bread and baked goods, including saturated red tones for displaying meat at the grilling section. The salad bar display further required fresh fruits and vegetables to be rendered in vivid colour, and the food preparation areas in natural daylight for visual accuracy and precision.

❖ Glare reduction, safety and eye strain

The design team selected recessed LED downlights with sealed enclosures. The IP65 damp-proof luminaires comply with commercial kitchen safety standards in preventing particulate contamination. Flangeless plaster-in downlight trims were engineered to fit downlight housings and to further reduce glare, eye strain and fatigue.

❖ Harnessing daylight through windows and skylights

Spearhead`s smart face-lift allowed for dining areas to harness daylight through glazed windows alongside the Hotel`s landscaped gardens and from boxed celestial skylights above central seated areas. Not only was this an important consideration to reduce daytime dining energy consumption, but also facilitates a bonafide alfresco dining experience.

❖ Energy efficient LED filament bulbs 

Giant LED filament bulbs was introduced for key ambient layering of the main dining areas. Spherical bulbs, over-sized tubes, tear drops and globes paired in dramatic clusters provides perfect ambient aesthetics. With a timeless vintage glow, similar to that of a candle light, the 10w LED dim-to-warm lamps adds a familiar sense of place and a warm, inviting ambience.

The giant bulbs utilize the latest high efficiency sapphire LED filaments and long life IC driver technology. The lamp base & holder size was also increased from E27 to E40 industrial, to accommodate larger LED drivers and capacitors, improving the lamp`s lifespan and luminous performance.

❖ Indirect lighting and balanced distribution

The design team at Spearhead also introduced bespoke Cove lights and stylish Aviation themed Light boxes. The LED strip lights recessed above custom-cast gypsum cornices, allows for important indirect and accent lighting. The Cove lights showcase the vintage pressed ceilings, softens and also diffuses the distribution of light. The Aviation themed Light boxes with dimmable LED back lighting, further expands the “the Tin Goose” branding elements, reducing shadows and completing the balanced distribution of light.
